I’m a front-end web developer and let me tell you, I wouldn’t be anywhere near as productive as I am without my dual monitor setup (two 24″). If not dual monitors, I’d probably go for one large 30″ or so.

I use a 23″ Cinema Display with MacBook Pro 17 in the office and notice a huge difference when working at home or away.
I don’t think I could use Adobe Creative Suite without a second monitor as I have all the panels open on one screen leaving the other free for workspace.

As a Virtual Assistant, I mostly use my laptop for my main computer. I like the flexibility and although I have a larger laptop screen but have a 19″ connected most of the time and it’s great for multiple web browsers, comparing docs, comparing web changes, etc. I find it very hard to function when I’m stuck with my laptop monitor only. So for productivity I agree with the other comments, can’t beat a dual monitor setup.
